Step 1
You’d never guess that these savory Sheet Pan Mini Turkey Meat Loaves have riced cauliflower added to the meat mixture. This helps keep the lean meat juicy as it bakes and is a genius way to squeeze an extra vegetable into a traditional turkey meatloaf recipe. The slimmed-down mini meatloaf loaves roast on a single sheet pan with potatoes and green beans, although you can easily substitute your sides of choice, for a fast, delicious sheet pan meal that delivers more than half your daily servings of vegetables. Step 2
Heat the oven to 425°F. While the oven is heating, season the turkey with salt and pepper. Thoroughly mix the turkey, cauliflower, bread crumbs, egg, 3 tablespoons cheese, the garlic powder and 1/3 cup sauce in a large bowl. Firmly shape the turkey mixture into 6 mini meat loaves.
Step 3
On a rimmed baking sheet, place aluminum foil to cover half the sheet, folding the edges up about 1/2-inch (this will keep the sauce from running onto the other half of the baking sheet). Spread 1/2 cup sauce on the foil. Place the meat loaves onto the sauce. Top with the remaining sauce.
Step 4
Place the potatoes and green beans on the other half of the baking sheet. Drizzle with the olive oil and season with salt and pepper.
Step 5
Bake for 40 minutes or until the meat loaves are done. Sprinkle with the remaining cheese. Serve the meat loaves with the potatoes and green beans.

Recipe Note: You can substitute your favorite vegetables for the green beans in this recipe. Peppers and onions work well, but feel free to be creative!
Ingredients
1 1/2 pounds ground turkey or ground chicken
10 ounces frozen riced cauliflower, thawed and very well drained (best to roll up in clean dish towel or paper towel and squeeze all the liquid out)
1 cup Italian seasoned bread crumbs
1 egg
1/3 cup grated Parmesan cheese
1 teaspoon garlic powder
1 jar (24 ounces) Prego® Traditional Italian Sauce
1 pound small potatoes, cut into quarters or baby potatoes, cut in half
12 ounces trimmed green beans or frozen green beans
1 tablespoon olive oil
